Creamy Chicken Quesadilla Waffles
This spin-off of creamy chicken enchiladas is one of my family's favorite. These enchiladas turned quesadillas taste amazing and do not take very long to make. They are rich in flavor, creamy in texture and a quick way to make some comfort food.
Ingredients:
- 1 onion
- 1/3 cup green pepper
- 2 tablespoons vegetable oil
- 2 cups of cooked chicken
- 1 1/2 cup cheddar cheese
- 1 can (4 oz.) of chopped green chilies
- 1 can (10 3/4 oz.) condensed cream of chicken soup
- 1 cup (8 oz.) sour cream
- 1/4 teaspoon ground coriander
- 1/8 teaspoon ground cumin
- 12 soft shell tortillas
Steps:
- Combine onion, green pepper and oil. cook until vegetables are tender
- Add cooked shredded chicken, 1/2 cup of cheese and chilies to the vegetables. Set aside
- Combine soup, sour cream, coriander and cumin in a sauce pan. cook until warm, stirring frequently
- Stir 1/2 cup of the sauce into the chicken mixture
- Place one tortilla shell onto the waffle maker, add about 1/2 cup of the chicken mixture and a little bit of cheese
- Add another tortilla shell over the top of the mixture and cook for about a minute until tortillas become golden brown
- Add sauce and cheese onto the top of the quesadilla
